Blueberry Quinoa Salad with Asian Sweet Spicy Dressing
Blueberry Quinoa Salad with Asian Sweet Spicy Dressing submitted to the 2014 Our State Blueberry Recipe Contest by H. Walsh, of Plainfield, IN This very simple recipe combines the flavors and textures of two healthy foods, blueberries and quinoa, grain of the ancient peoples!
- 2 tbsp sweet chili sauce
- 2 tspn soy sauce
- 2 tspn rice vinegar
- 2 tbsp olive oil
- 1 cup cooked quinoa
- 1/2 cup blueberries
- 1/2 mango
- 1/2 cup celery (sliced)
- 2 tbsp sliced almonds
- Create dressing by mixing sweet chili sauce, soy sauce, rice vinegar and olive oil.
- Add quinoa, blueberries, mangos, cilantro, celery, and sliced almonds to the dressing bowl.
- Toss to coat
