Blueberry Balsamic Vinegar
Why buy a commercial salad dressing with just a hint of blueberries when you can make this tasty blueberry balsamic vinaigrette! Not only is this tastier, but you can pronounce all the ingredients!
There are actually two recipes here! The foundation is the Blueberry Balsamic Vinegar which can be used to make a tasty Blueberry Vinaigrette!
- 4 cups fresh or frozen blueberries
- 1 quart white balsamic viengar
- 1/4 cup sugar
- 1 whole lime (strips of zest)
- 1 3 inch cinnamon stick
- In a large non-reactive saucepan with a potato masher or the back of a large spoon, crush blueberries
- Add vinegar, sugar, lime zest and cinnamon
- Bring to a boil
- Reduce heat and simmer, covered, 20 minutes
- Cool slightly
- Pour into a large bowl
- Cover and refrigerate for 2 days to allow flavors to blend
- Place a strainer over a large bowl
- In batches, ladle blueberry mixture into strainer
- With a large spoon, press out as much liquid as possible
- Discard solids
- Pour vinegar into clean glass bottles or jars
- Refrigerate, tightly covered, until ready to use
- Easily extend the above recipe for Blueberry Balsamic Vinegar into Blueberry Vinaigrette!
- 3 tblsp of the above recipe to:
1/4 cup of extra virgin olive oil
1/2 teasp of salt
1/8 teasp of ground black pepper!
