Gwaltney Blueberry Farms Blueberry Syrup
Many years ago the Gwaltney Blueberry Farm of Banner Elk, NC published a booklet of recipes for visitors to their blueberry farm. This recipe is from the 2013 Our State’s Blueberry Recipe Collection sponsored by the North Carolina Blueberry Council. This recipe along with 44 others are available for on this page! - 1 pint fresh blueberries (rinsed and drained)
- 1 1/2 cup water
- 3 cups sugar
- 1/3 cup light corn syrup
- 2 to 4 tblsp lemon juice (optional)
- Puree berries in a blender, adding some of the water if more liquid is needed
- Combine blueberries, remaining water and sugar in a large heavy saucepan.
- Heat mixture over medium heat, stirring constantly until liquid comes to a boil.
- Lower temperature and simmer, uncovered about 10 minutes until the mixture is translucent.
- Remove pan from heat.
- Press blueberry mixture through a strainer with the back of a spoon.
- Add corn syrup and stir.
- If desired, add lemon juice to taste.
- Serve hot over pancakes, french toast, pound cake or ice cream!
