Today’s lunch is just one example as it re-purposes yesterday’s rather tasty grilled boneless chicken thigh as well as the sauteed bell pepper and onions.

While getting ready to make chicken tacos out of on of the leftover grilled thighs, I recalled that the house was full of blueberries. Not only was the freezer full of bargain blueberries, there were early season fresh and even a bag of home-made dried blueberries.

Something said use the dried blueberries, but I opted to use frozen for this kitchen blueberry experiment. In retrospect, I’d suggest that either dried or fresh would have been easier, less messy and, well safer… (menu modification below negates all three issues)

First, no fingers were lost in this blueberry experiment. If I had to do it all again, I’d have whipped out the small food processor or little TV jar chopper upper.

The results were a rather tasty mash-up of leftover grilled chicken thigh, chopped up with sauteed onion, bell pepper and blueberries. Didn’t need any salsa or cheese either! Either would have diminished the subtle fruity flavor injected by the frozen blueberries.

1. Chop or shred leftover chicken. (1 to 2 boneless thighs or breasts)
2. Chop grilled onion and bell pepper in to small pieces (1/4 to 1/2 cup)
3. Chop, grind or mash up 1/2 cup of blueberries in food processor (fresh, frozen or dehydrated)
(step #3 modified to minimize mess especially if using frozen blueberries)
4. Mix all chicken, onion/bell pepper and blueberries together in bowl.
5. Heat up your favorite wrap or tortilla
6. Optionally heat your chicken blueberry fajita mixure
7. Assemble into heated wrap or tortilla
8. ENJOY!

Of course if a read submits a “from scratch” recipe with photos that is deemed tastier, we’d consider it for publication! FYI mine were heated and it was particularly enjoyable savoring the juice in the bowl…
