Blueberry-Basil Compote over Blueberry Waffles with Orange Cheesecake Drizzle
Compote
- 3 cups fresh blueberries
- 0.4 oz fresh basil (about 10 large leaves cut in chiffonade)
- 1/4 cup white granulated sugar
Drizzle
- 4 oz cream cheese (softened)
- 1/4 cup freshly squeezed orange juice
- 1/4 cup white granulated sugar
Waffles
- 1 1/2 cup all-purpose gluten free flour
- 1 tbsp white granlated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/2 tsp orange peel (freshly grated)
- 2 tbsp butter (melted)
- 3/4 cup water
- 1/4 cup dried blueberries
Make the Compote
- To make the compote, place the blueberries, basil, and ¼ cup white sugar in a large bowl and macerate with a potato masher.
- Place in refrigerator until ready to use.
Make the Cheesecake Drizzle
- To make the cheesecake drizzle, place the cream cheese, orange juice and ¼ cup of sugar in a medium size bowl and mix together with a whisk or electric mixer until no clumps remain; set aside.
Make the Waffles
- Preheat a waffle iron.
- Mix together the flour, remaining sugar, baking powder, baking soda, salt, cinnamon, and orange peel in a large bowl.
- In another small bowl, mix together the egg, melted butter, and water.
- Stir the liquid ingredients into the dry ingredients until just combined.
- Stir in the dried blueberries.
- Pour mix into a waffle iron in batches (batter will make 4 waffles), cooking until golden brown according to the waffle iron instructions.
- Once cooked, plate the waffles, topping with 1/4th of the orange cheesecake drizzle and then 1/4th of the blueberry-basil compote.
- Serve immediately.
