Traditional blueberry buckle to enjoy for breakfast, snack or main dessert!
Blueberry Buckle
A North Carolina Tradition, this Blueberry Buckle was submitted by C .Hagget of New Bern North Carolina for the 2014 Our State Blueberry Recipe Contest. Buckles are a cake that has the fruit, traditionally blueberries, mixed into the batter before baking. A blueberry buckle gets a struesel like topping that “buckles” during baking. This crumpled top which is where the name is derived.
Cake
- 3/4 cup sugar
- 1/4 cup butter or margine
- 1 egg
- 1/2 cup Milk
- 2 cups flour (sifted)
- 2 tsp baking powder
- 1/2 tsp salt
Crumb Topping
- 1/2 cup sugar
- 1/3 cup flour
- 1/2 tsp cinnamon
- 1/4 cup butter or margine (softened)
- Combine sugar, butter and egg and mix thoroughly.
- Stir together the flour, baking powder and salt.
- Add alternately with milk to the butter mixture, mixing until smooth.
- Fold in blueberries. Spread batter in a greased and floured 9-inch square pan.
- For the crumb topping combine the sugar with the flour and cinnamon.
- Cut in the softened butter to make a crumb mixture. Sprinkle evenly over the batter in the pan.
- Bake at 375 degrees for 40-45 minutes or until a wooden pick inserted in the center comes out clean.
