No Bake Gluten-Free Oatmeal Blueberry Cookies
From the secret kitchen of the North Carolina Blueberry Council, comes this gluten-free, no sugar, no bake, oatmeal blueberry cookie. These are an easy and quick way to stretch out a cup of dried blueberries into a party favor for several people. Also these are lightly sweetened with maple syrup, so overall, they are pretty healthy all the way through!
- 1 cup old fashioned oats
- 1/2 cup dried blueberries
- 1 cup cashews (substitute pecans or almonds)
- 5 tblspn coconut oil
- 6 tblspn maple syrup
- 2 tblspn real vanilla extract
- 1/2 tspn sea salt
- 1/4 cup chocolate chips (personal choice semi-sweet, milk, or dark chocolate)
- 1/8 cup dark rum (OPTIONAL FOR GROWN UPS)
- Grind cashews and oatmeal in food processor until well blended
- Add ALL remaining ingredients to processor and grind till will mixture is well blended
- Put mixture in covered bowl and chill in refrigerator for approx 20 min. This allows everything to meld together and cookies to firm up.
- Remove mixture from refrigerator and spoon into small cookies. Use small melon scoop or tablespoon to size.
- Let chill another twenty minutes and then serve.
