Grilled Salmon Flatbreads with Fresh Blueberry Salsa
This recipe by way of the US Highbush Blueberry Council is from Chef Jacob Peck of the Garden Café at the Chicago Botanic Garden.
- 1 teasp ground coriander
- 1 teasp ground fennel seed
- 1 teasp ground cumin
- 1 teasp ground mustard
- 1 teasp ground cardamon
- 1/2 teasp salt
- 1/4 teasp black pepper
- Spice Blend: In a small bowl, stir together 1 teaspoon each ground spices: coriander, cumin, fennel seed, cardamom and mustard seed; 1/2 teaspoon salt and 1/4 teaspoon black pepper.
