This is an easy to make desert that blends another great fruit, apples, with our favorite blueberry! Add some oatmeal and you have a great tasting treat that works well with your favorite ice cream, but vanilla would be this editors choice! By the way, another benefit of the “two fruit” approach here is that this recipe allows you to extend a small amount of blueberries into a big dessert! Another note, there isn’t a lot of sugar in this recipe either!

Apple Blueberry Crisp
Crumbly whole oats, toasted nuts and cinnamon-laced sugar collide with fragrant, bubbling fruit in this Apple Blueberry Crisp. Served warm with a scoop of vanilla ice cream, this melt-in-your-mouth dessert will beckon everyone to the table for a taste. Follow these simple steps when you’re ready to bake a mind-blowing Apple Blueberry Crisp.
- 1 cup old fashioned oats
- 1/2 cup flour (divided)
- 1/2 cup sugar (divided)
- 1 teasp ground cinnamon
- 4 tbsp butter (cut into small pieces)
- 1/4 cup pecans
- 1 bag frozen bluberries (12 to 16 oz bag)
- 4 cups apples (peeled and cubed)
Basic Prep
- Preheat oven to 375 dege
- Lightly grease 2 quart baking dish
Prep Topping
- In medium sized bowl combine oaks, 1/4 cup flour, 1/4 cup sugar and the cinnamon.
- add butter
- using fingers, (remember wash well), rub butter with dry ingredients to form coarse crumbs
- stir pecans into mixture
Prep Blueberry – Apple Mix
- In large bowl toss apples and blueberries together
- Pour apple-blueberry mixture into prepared baking dish
Combine & Bake
- Sprinkle prepared topping evenly over fruit
- Bake until apples are tender and topping is golden. Approximately 50 minutes depending on your oven.
Serve
- Add ice cream or frozen yogurt if desired
