A North Carolina Tradition, this Blueberry Buckle was submitted by C .Hagget of New Bern North Carolina for the 2014 Our State Blueberry Recipe Contest. Buckles are a cake that has the fruit, traditionally blueberries, mixed into the batter before baking. A blueberry buckle gets a struesel like topping that "buckles" during baking. This crumpled top which is where the name is derived.

Instructions
  1. Combine sugar, butter and egg and mix thoroughly.
  2. Stir together the flour, baking powder and salt.
  3. Add alternately with milk to the butter mixture, mixing until smooth.
  4. Fold in blueberries. Spread batter in a greased and floured 9-inch square pan.
  5. For the crumb topping combine the sugar with the flour and cinnamon.
  6. Cut in the softened butter to make a crumb mixture. Sprinkle evenly over the batter in the pan.
  7. Bake at 375 degrees for 40-45 minutes or until a wooden pick inserted in the center comes out clean.
