Yams and Pumpkin Recipes Featured With Blueberries

These two recipes were created by Erika Kerekes of In Erika’s Kitchen for a Los Angeles food event called “A Very Blueberry Thanksgiving”. The event was sponsored by the U.S Highbush Blueberry Council.

If you want a quick, healthy way to include yams or garnet sweet potatoes, try the Chili Roasted Sweet Potatoes with Dried Blueberries. This recipe is extremely easy to prepare. Even better, the recipe focuses on the flavors of the two main ingredients, yams and blueberries. Those conscious about added sugars, will like this as there is no added sweeteners

Pumpkin Blueberry Trifle by Erika KerekesThe second recipe added is also all about shades of orange and blue. Pumpkin Blueberry Trifle should make up to those with a sweet tooth.  This dessert  recipe was created especially for the event by Erika Kerekes and was one of the ten featured at the event. All of the recipes featured frozen, freeze-dried, or fresh blueberries.

On a closing note, the web support team of the North Carolina Blueberry Council doesn’t just seek out  and share information about blueberries! No way, the “web dude” is all about blueberries! In fact blueberries factored into dinner right after these two recipes were posted.  Although the recipe isn’t posted here because it is still experimental, the guest reviews from last night suggest a share is imperative.
Warning, the following recipe is all about animal protein.

Bonus Experimental Recipe From the Webmaster!

Webmaster John’s Pork Shoulder Steak Apple Blueberry Teriyaki Marinade
(Experimental)
Pork Shoulder (or favorite pork roast) sliced into 1″ to 3/4″ steaks
DSC036212 cups of blueberries
1 cup of apple juice
1/2 cup low sodium soy sauce
1 teaspoon chili powder
1/2 teaspoon ground sage
1/2 teaspoon garlic powder

1. Mix 1 cup of the blueberries, soy sauce, and the apple juice
2. Pour the liquid over pork steak
3. Mix dry spices together and sprinkle over meat
4. Let marinate for 6 hours, but flip meat halfway through
5. Grill over indirect heat till inner temperature reads 170 degrees – Flip as necessary
6. Turn heat off move meat to plate for resting.
7. Put remaining blueberries on top of meat.
8. Serve!
