Man On Blueberries and Peanut Butter

Another Blueberry Recipe That Won’t Get Entered, but…
The contest is on, have you entered a recipe yet? There is an emphasis on “anyone can do blueberries” at the secret developmental kitchen of the North Carolina Blueberry Council, Inc. Occasionally that means experimenting by mixing stuff so easy to cook, a toaster can do it! In this case, convenience trumped fancy function.

Scenario…
No bread in the house and ran out of the last of the organic maple syrup the day before…
Had a hankering for a peanut butter sandwich…
There were toast waffles in the freezer as well as blueberries (of course)

Hunger can be the mother of creativity…
What you need…
Took one cup of blueberries and put them in a sauce pan.
Added 1/4 cup of 100% cranberry juice
(not cocktail, real cranberry juice! Cranberries are cousins to blueberries!)
Added a few shakes of cinnamon
Heated saucepan till blueberries were just starting to simmer.

That was pretty easy, but from there it got downright simple.

Toast up a pair of your favorite frozen waffles.
Spread on peanut butter on waffle #1, lay in bottom of bowl
Lay over about 1/2 of warm prepared blueberries
Spread peanut butter on waffle #2
Stack in bowl and lay on rest of warm blueberries

Let soak a few minutes

Enjoy…
